        <title>Cold Cucumber Soup</title>

1/4 c Leeks, chopped fine &lt;br /&gt;
1/4 c Onion, chopped fine &lt;br /&gt;
1/4 c Celery, chopped fine &lt;br /&gt;
3 Cucumbers, peeled, seeded, &lt;br /&gt;
And chopped Butter 1/4 c Sherry &lt;br /&gt;
2 c Chicken stock &lt;br /&gt;
Roux* Salt and pepper to taste Pinch of sesame seeds, dry Mustard, thyme, chervil 1 pt Light cream &lt;br /&gt;
1/4 c Orange juice &lt;br /&gt;
Saute the leeks, onions, celery, and cucumbers in butter. Add sherry, chicken stock and seasonings and let cook 20 minutes. Add roux* to thicken and then add light cream. Cook 15 minutes and cool. Add the orange juice and serve cold. *Roux-Mixture of melted butter and flour used to thicken soups and sauces &lt;br /&gt;

2 md Cucumbers &lt;br /&gt;
2 tb Light Soy Sauce &lt;br /&gt;
1 1/2 tb White Vinegar &lt;br /&gt;
1 tb Chopped Green Onions &lt;br /&gt;
1/2 ts Sugar &lt;br /&gt;
1/2 ts Chili Powder &lt;br /&gt;
1 1/2 ts Sesame Oil &lt;br /&gt;
5 c Chicken Stock &lt;br /&gt;
2 ts White Sesame Seeds &lt;br /&gt;
Peel the cucumbers and slice very thinly. Place in a dish and add the soy sauce, vinegar, green onions, sugar, chili powder and sesame oil. Set aside for 1 hour, then add the chicken stock. Toast the sesame seeds in a small pan over medium heat until they turn golden and begin to pop, then grind finely. Transfer the soup to a tureen and sprinkle on the sesame seeds.
