        <title>Mincemeat Cake</title>

2 1/2 c Flour &lt;br /&gt;
2 ts Baking powder &lt;br /&gt;
1 ts Soda &lt;br /&gt;
1 ts Salt &lt;br /&gt;
1/2 ts Cloves &lt;br /&gt;
1/2 ts Nutmeg &lt;br /&gt;
1/2 ts Cinnamon &lt;br /&gt;
1/2 c Shortening &lt;br /&gt;
1 1/2 c Sugar &lt;br /&gt;
3 Eggs &lt;br /&gt;
1 c Milk &lt;br /&gt;
1 ts Vanilla &lt;br /&gt;
1 1/2 c Mincemeat &lt;br /&gt;
1 c Chopped nuts &lt;br /&gt;
------------------------------CARAMEL FROSTING------------------------------ 2 c Brown sugar &lt;br /&gt;
4 tb Butter &lt;br /&gt;
6 tb Shortening &lt;br /&gt;
1/2 ts Salt &lt;br /&gt;
1/2 c Milk &lt;br /&gt;
3 c Confectioners' sugar &lt;br /&gt;
Heat oven to 350 F. Grease and flour three 9-inch cake pans. Set aside. Sift together flour, baking powder, soda, salt, cloves, nutmeg and cinnamon; set aside. Cream shortening until light and fluffy. Slowly add sugar. Beat until creamy. Add eggs 1 at a time, blending after each addition. Combine milk and vanilla. By hand, stir into creamed mixture alternately with the dry ingredients, starting and ending with the dry. Blend thoroughly after each addition. Add mincemeat and nuts. Stir to blend. Pour into prepared pans. Bake at 350 F. for 35 minutes or until a toothpick inserted near center comes out clean. Remove from oven. Invert pans onto cooling racks. Leave for 10 minutes. Remove cake from pans; cool completely. Frost with caramel or your favorite frosting. To make caramel frosting: In a saucepan, combine brown sugar, butter, shortening and salt. Bring to boil, stirring constantly. Slowly add milk. Bring back to boil and cook 3 minutes. Cool slightly. Add confectioners' sugar. Beat until creamy and of spreading consistency. 1 c Whole wheat flour &lt;br /&gt;
3 ts Gluten &lt;br /&gt;
1 1/8 c Water &lt;br /&gt;
5 tb Buttermilk powder &lt;br /&gt;
2 1/2 ts Red Star Active Yeast &lt;br /&gt;
3 tb Molasses &lt;br /&gt;
1 1/2 ts Salt &lt;br /&gt;
1 tb Butter &lt;br /&gt;
1/4 c Grapenuts &lt;br /&gt;
Have ingredients at room temperature. Add in order described by machine manufacturer. Use light setting. For the Hitachi 101 I warm liquid in microwave for 1 minute before I add to bread pan. 1 c Dry roast peanuts; unsalt &lt;br /&gt;
1/3 c Butter or margerine &lt;br /&gt;
1 lb Marshmallows &lt;br /&gt;
1/2 c Peanut butter &lt;br /&gt;
3 c Puffed rice cereal &lt;br /&gt;
1 c Apricots; chopped &lt;br /&gt;
1 c Raisins &lt;br /&gt;
In a large bowl, combine cereal, apricots, raisins and peanuts. In a microwave safe 13x9&quot;, melt butter and marshmallows on high for 2 minutes. Stir; add peanut butter cook on high 2 minutes longer. Stir until well blended, add cereal mixture to dish and toss until well coated. Working quickly with greased hand, form into balls, using about 1/2 C mixture, per ball. If mixture begins to harden, cook on high for 30 seconds, or until softened. If desired , mixture may be spread in unbuttered 13x9&quot; dish and cooled and cut into bars. Makes 1 dozen balls or 2 dozen bars, This is very similar to the Rice Krispie treats, but with the apricaots and raisins it definitely gives it a fall look. I saw another idea of putting the mixture into cookie cutters, and letting it cool there so the shapes could be pumpkins, witches, etc. With a little gel piping they would be great. &lt;br /&gt;
