        <title>Eggplant with Tofu</title>

3/4 lb Japanese eggplant &lt;br /&gt;
- (about 3 cups sliced) 1/4 lb Tofu &lt;br /&gt;
6 tb Oil &lt;br /&gt;
2 -to &lt;br /&gt;
3 Garlic cloves; crushed &lt;br /&gt;
1 -to &lt;br /&gt;
5 Red chili peppers &lt;br /&gt;
-- seeded and chopped 10 -to &lt;br /&gt;
15 Sweet basil leaves &lt;br /&gt;
1 tb -to &lt;br /&gt;
3 tb Yellow bean sauce &lt;br /&gt;
- (SEE NOTE) NOTE: (yellow bean sauce from Thailand is saltier than sauce from Hong Kong or China, so season to taste) Slice unpeeled eggplant crosswise into slices 1/8-inch thick. Cut tofu into 1/2-inch cubes. Heat oil in skillet; add garlic and stir-fry until light brown (don't burn!). Add eggplant and tofu and cook for 5 to 7 minutes. Add remaining ingredients; mix gently. Serve immediately, since eggplant and basil turn dark if dish sits after cooking. Makes 3 to 4 servings. 2 tb Oil &lt;br /&gt;
2 ea Garlic cloves, diced &lt;br /&gt;
3 lg Onions, sliced &lt;br /&gt;
4 tb Tamari &lt;br /&gt;
1/2 ts Garlic powder &lt;br /&gt;
1/2 ts Basil &lt;br /&gt;
1/2 ts Salt &lt;br /&gt;
3 tb Wholewheat flour &lt;br /&gt;
1/2 c Nutritional yeast &lt;br /&gt;
1 c Water &lt;br /&gt;
3 tb Tahini &lt;br /&gt;
1 lg Eggplant, peeled &amp;amp; cut into &lt;br /&gt;
-- 1/4 inch thick rounds 1/4 ts Paprika &lt;br /&gt;
Heat oil in a frying pan over medium heat. Add garlic, onions &amp;amp; saute for 5 minutes. Season with 1 tb tamari &amp;amp; half the garlic, basil &amp;amp; salt. &lt;br /&gt;
In a small pot, combine the flour &amp;amp; nutritional yeast. Add water, tahini &amp;amp; the rest of the seasonings. Mix well. Over a low heat, cook slowly for 15 minutes, stirring frequently until the sauce thickens. If too thick, add more liquid. Oil an 8 X 12 inch baking dish. Pour in a layer of sauce, then a layer of sliced eggplant &amp;amp; a layer of onions. repeat the layering, finishing with the sauce. Sprinkle with Paprika. 3 Garlic cloves &lt;br /&gt;
1/2 md Onion, chopped &lt;br /&gt;
1/2 c Minced fresh parsley &lt;br /&gt;
1 1/2 c Cooked chick peas &lt;br /&gt;
1 tb Fresh lemon juice &lt;br /&gt;
1 ts Ground cumin &lt;br /&gt;
1/2 ts Basil &lt;br /&gt;
1/2 ts Coriander &lt;br /&gt;
1/2 ts Thyme &lt;br /&gt;
1/2 ts Salt &lt;br /&gt;
1/2 ts Hot pepper sauce &lt;br /&gt;
Black pepper to taste 2 sl French bread, torn &amp;amp; soaked &lt;br /&gt;
-- in cold water to cover 1/2 c Wholewheat flour &lt;br /&gt;
1 tb Extra-virgin olive oil &lt;br /&gt;
Preheat oven to 375F. Blend garlic, onion &amp;amp; parsley in food processor till finely minced. Add chick peas &amp;amp; blend til lfinely chopped. Add lemon juice, herbs &amp;amp; spices. Squeeze water out of bread &amp;amp; add to mixture. Process till well mixed. Form mixture into 16 balls. Flatten each ball to form 1/2-inch patties &amp;amp; dredge in flour. Place on a lightly greased baking sheet. Bake for 10 minutes, turn &amp;amp; bake for another 10 minutes. In a heavy skillet, heat half the oil over medium-high heat. Add patties &amp;amp; fry till golden brown &amp;amp; crispy on the bottom. Turn patties, add rest of oil, fry till golden &amp;amp; crispy, then drain on paper towels. Serve with pita bread &amp;amp; garnished with lettuce, tomatoes, cucumbers, onions &amp;amp; hot sauce, see recipe. &quot;Vegetarian Times&quot; July, 1993 &lt;br /&gt;
