2 whole chicken breasts -- split and fat

removed or 1 broiler chicken, cut up and skin removed 1/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 cup Mozzarella cheese -- (2 ounces)

3/4 cup salsa

Preheat oven to 375 degrees. Place chicken, bone-side down, in a 9x13-inch baking pan. Combine Parmesan cheese and Italian seasoning and sprinkle over chicken. Bake for 15 minutes if using two breasts, 45 minutes for a broiler chicken. Sprinkle with mozzarella cheese and bake 1 more minute. Serve with salsa.
